Ingredients
Pork Tenderloin
- 1½ lbs pork tenderloin
- 1 tbsp olive oil
- 1 bunch sage leaves finely chopped
- 4 cloves garlic finely chopped
- 1 tbsp kosher salt
- 1 tbsp black pepper
Peach Ginger Sauce
- ¾ cup Peach preserves
- 2 tbsp ginger minced
- 2 tbsp apple cider vinegar
- ½ tsp kosher salt
- ½ tsp crushed red pepper
- 2 cloves garlic minced
Instructions
Peach Ginger Sauce
- Combine all the ingredients for the Peach Ginger Sauce in a mini food processor and blend well. Set aside. You can make this the night before and refrigerate.
Pork Tenderloin
- In a small bowl, combine the sage, garlic, salt, and pepper to create a rub. Mix well.
- Coat the pork tenderloin in olive oil and apply the sage rub all over. Cover and let the tenderloin come to room temperature while the salt gets absorbed. About 1 hour.
- Light a hot fire and let it burn down to coals.
- Grill the tenderloin until the internal temperature reaches 145 °F. I prefer rotating the tenderloin after 7 minutes, six minutes, and then leaving it on for a final five minutes.
- Remove the pork tenderloin from the grill and let it rest for 5 minutes before cutting the tenderloin into ½ inch slices. Pour over the peach ginger sauce and enjoy!
