Pork Tenderloin
- 1½ lbs pork tenderloin
- 1 tbsp olive oil
- 1 bunch sage leaves finely chopped
- 4 cloves garlic finely chopped
- 1 tbsp kosher salt
- 1 tbsp black pepper
Peach Ginger Sauce
- ¾ cup Peach preserves
- 2 tbsp ginger minced
- 2 tbsp apple cider vinegar
- ½ tsp kosher salt
- ½ tsp crushed red pepper
- 2 cloves garlic minced
Pork Tenderloin
In a small bowl, combine the sage, garlic, salt, and pepper to create a rub. Mix well.
Coat the pork tenderloin in olive oil and apply the sage rub all over. Cover and let the tenderloin come to room temperature while the salt gets absorbed. About 1 hour.
Light a hot fire and let it burn down to coals.
Grill the tenderloin until the internal temperature reaches 145 °F. I prefer rotating the tenderloin after 7 minutes, six minutes, and then leaving it on for a final five minutes.
Remove the pork tenderloin from the grill and let it rest for 5 minutes before cutting the tenderloin into ½ inch slices. Pour over the peach ginger sauce and enjoy!
