Ingredients
  

Pork Tenderloin

  • lbs pork tenderloin
  • 1 tbsp olive oil
  • 1 bunch sage leaves finely chopped
  • 4 cloves garlic finely chopped
  • 1 tbsp kosher salt
  • 1 tbsp black pepper

Peach Ginger Sauce

  • ¾ cup Peach preserves
  • 2 tbsp ginger minced
  • 2 tbsp apple cider vinegar
  • ½ tsp kosher salt
  • ½ tsp crushed red pepper
  • 2 cloves garlic minced

Instructions
 

Peach Ginger Sauce

  • Combine all the ingredients for the Peach Ginger Sauce in a mini food processor and blend well. Set aside. You can make this the night before and refrigerate.

Pork Tenderloin

  • In a small bowl, combine the sage, garlic, salt, and pepper to create a rub. Mix well.
  • Coat the pork tenderloin in olive oil and apply the sage rub all over. Cover and let the tenderloin come to room temperature while the salt gets absorbed. About 1 hour.
  • Light a hot fire and let it burn down to coals.
  • Grill the tenderloin until the internal temperature reaches 145 °F. I prefer rotating the tenderloin after 7 minutes, six minutes, and then leaving it on for a final five minutes.
  • Remove the pork tenderloin from the grill and let it rest for 5 minutes before cutting the tenderloin into ½ inch slices. Pour over the peach ginger sauce and enjoy!
